Go with Nikon as your first choice, Canon as a second choice. An external flash, either the kind that mounts on a frame with the camera, or a pair of umbrella strobes. The frame and a flexible flash cord are relatively inexpensive.
As for composition, I prefer candid and spontaneous pictures, or at least ones that don't look posed every time. The posed photos are fine and the models are lovely, but they don't have to be looking at the camera in every single frame. Go check out professional portrait photographer sites, and you will see that some of the photos have the person looking off in the distance or at something around them, just not right into the lens.
The nice thing about digital is that you can do a ton of experimenting without burning through film. Get a cooperative model and spend an afternoon trying different poses or different shots that you haven't done before. For instance, sitting in the pool in her boots and skirt reading a book as if that is her usual attire for lounging and relaxing in the pool. Or playing with a toy boat, or blowing bubbles.
